Healthy Flax & Wheat Bran Muffins



We've been eating so many sweets over the holidays, this morning I decided to make some healthy food. No sugar in this recipe, just a 1/2 cup of honey. Personally I like the honey spread on the outside of my muffin with butter. The recipe called for applesauce, but I didn't have any so I took a pear and pureed it to come up with a juicy pear sauce. Then I topped them with a large fresh blackberry. Did I mention they look better than they taste, I guess that's bran muffins for you. Next time I'll try a different recipe or add a little Splenda to sweeten them a bit.
Here's the Recipe

Flax & Wheat Bran Muffins

Preheat Oven to 400

1 Cup Wheat Bran
1/4 Cup Flax seed - I used milled flax seed
1 1/4 Cups Flour
1 tsp. Baking Powder
1 tsp. Baking Soda
1/2 Cup chopped nuts

Combine first 6 ingredients then set aside.

3/4 Cup Applesauce
1/2 Cup Honey
2 Tbsp. Oil
2 Eggs
1 Cup Milk

In separate bowl blend applesauce, milk, honey, oil and eggs.
Add dry ingredients to egg mixture and stir until just blended.
Fill greased muffin cups and bake for 15 - 20 minutes. Makes 12
muffins. I added a fresh blackberry to the center of each muffin.
You could also add raisins, blueberries, dried apricots or craisins.

These muffins weren't real sweet, next time I might try 1/4 cup
of Splenda to sweeten them up a bit.

I don't know how they taste but they look wonderfully tempting. Wish we were on the beach in Mexico and you could come over and knock on the window and share them with us. mf
