Quick and Easy Pumpkin Cookies


Does that pumpkin look as tempting to you as it does 
to me?  Do you love pumpkin pie, bars or cookies?  
Every year when I see pumpkins in the stores,  I search 
for a can of Libby's pumpkin.  

Last year I tried a new to me pumpkin cookie recipe, but the 
cookies were dry and not very tasty.  So this year I tried a
short-cut recipe from Lori at BeeinmyBonnet using 3 ingredients.  
Well I use 4 ingredients, can't forget the yummy walnuts.   
This recipe is so easy and I substituted white chocolate chips
for the chocolate chips and they were delicious.  




Here are the ingredients and don't forget the can of 
pumpkin.  

1 Spice Cake Mix
1 Can 15 0z Pumpkin
1 Cup Chocolate chips or White Chocolate chips
1 Cup Chopped Walnuts

Mix dry cake mix with the can of pumpkin until smooth,
then add the chips and walnuts.

Bake at 350  10-12 minutes  
Makes 2-1/2 dozen cookies

The consistency is a little stickier than normal cookies, I
was tempted to add some flour.  Not to worry these are very
moist spongy soft cookies.



Warning: I bet you can't eat just one.
I put them in the freezer so I wouldn't be tempted to eat too
many.  Take them out, pop them in the microwave for 20-30
seconds and you have a scrumptious treat.

I made a chocolate pumpkin cake the other day with some fresh pumpkin puree. It was petty good.

Not that I bake or anything but canned pumpkin is almost impossible to find in ND. Last years crop was horrible and we couldn't get any canned pumpkin for last thanksgiving. This year the supplier was nice and sent us one case, though we ordered 4...sheesh.

I make a bundt cake with just chocolate cake mix and a can of pumpkin. I sprinkle confectioner sugar on top before serving. This is exceptional with some Schwan's Ice Cream or Frozen Yogurt! YUM!! I've never tried the cookies, but will this weekend. Thank you for the recipe.
