Best Sweet Potato Dish Ever

Do you like Sweet Potatoes?  I made this recipe last year and

took it for Thanksgiving dinner.  Let me tell you this dish was

an instant hit and so yummy it tastes so sweet it could be dessert.

It's become one of my all time favorite recipes.

I love Sweet Potatoes, but I love the Pecans and Brown Sugar topping

even more.

SWEET POTATO CASSEROLE


4 cups (3 lbs) sweet potatoes

2 eggs

1/2 stick of butter

1 tsp vanilla

1 cup sugar

1 tsp salt

1/2 cup of milk or 1 small can of evaporated milk


Peel and quarter sweet potatoes.  Boil potatoes until tender, drain and 
mash.  Add the above ingredients and mix together.  Pour into large
casserole dish or greased pan.  Approx. 8 X 10  

Now for the yummy...

Topping

1 cup brown sugar

1 cup chopped pecans

1/3 cup flour

1/2 stick butter, melted 

Mix topping ingredients together.   Crumble mixture on top of the
sweet potato mixture.  Bake at 350 degrees until the topping is
golden brown about 25 - 35 minutes.  You can make it ahead and 
store it in the refrigerator until you are ready to bake it.  


Enjoy and have a wonderful Thanksgiving!

Adore sweet potatoes, but don't have many inspirational recipes to try, so I thank you for sharing this. It looks divine! I bet that topping is like frosting!

Kim, your Fall quilt is so pretty! Sorry to hear about your wrist sprain, I am sure that is frustrating. The sweet potato recipe sounds yummy. I make sweet potatoes that are honey butter glazed and roasted in the oven, they are also really good.

I make this casserole except I bake the potatoes and I add a bit of cinnamon to them and to the topping. Also, this year I blended the casserole ingredients in my food processor. It made it very fluffy and light. Soooo good!

That looks delicious, I would have had that for dessert with the sweetness in it. I don't think we are as used to sweet with savoury as the Americans are. I hope you had a terrific day.

btw - this dish is very similar to the one my daughter makes :)
